This Level 7 Bachelor Degree Add-On programme develops students in the field of culinary arts. Students will acquire the critical thinking and applied skills necessary to succeed in various chef roles, culinary businesses, food enterprise development, and/or food innovation management.

The Chef de Partie Apprenticeship is an ‘earn and learn’ degree programme that combines on-the-job training with academic study in a Technological University.

A Chef de Partie is trained to: deliver advanced culinary skills in a professional kitchen; supervise a particular area or station within the kitchen; work on their own as well as train Commis Chefs.

The aim of this programme is to provide learners with the knowledge, practical skills and competence necessary for a career in a modern ever-changing restaurant environment. This will be achieved by developing modern food and beverage skills in various different styles of food service.

This programme offers those currently employed or seeking employment in the hotel industry the opportunity to pursue a degree in hotel management while simultaneously working with their sponsoring employer. Each year the programme will comprise of the delivery of 60 credits of study through a blended learning approach. This programme will require students to spend two blocks of four weeks per annum at MTU Kerry North Campus’ state-of-the-art facilities in the Hotel, Culinary Arts and Tourism Department. During this period a number of modules will be delivered. The remaining modules will be delivered online and through work-based learning.

An exit award, the Higher Certificate in Hotel Supervisory Management, is available after successful completion of year two.
